My family and I had found a similar recipe via Pinterest back when I was visiting in Pennsylvania. My mother made it for dinner one night and I knew that this could sate my craving when I returned to Nebraska. It's amazingly delicious and super easy to make, especially with my version. You and the family will be eating in no time!!! And if you're trying to reduce your carb intake, this salad with satisfy your sandwich craving.
The musical inspiration for this dish is from my friend Bradley's rock band Static Signal. I love their sound! It has a reminiscent feel of The Verve Pipe and Funeral for a Friend, very soulful and moving! I know you'll enjoy it!
Ingredients:
3 cups chopped iceberg lettuce (I used prepackaged)
2 cups chopped romaine lettuce
4 tbs. chopped black olives
1 cup chopped roma tomatoes
1 1/2 cups chopped Genoa Salami
1 1/2 cups chopped pepperoni
1/2 cup chopped mild banana peppers
Olive Oil & Vinegar dressing (I used Newman's Own)
OR Olive Oil and Red Wine Vinegar
In a very large salad bowl, layer in the following order:
1. Iceberg lettuce
2. Romaine lettuce
3. Pepperoni & Salami
4. Tomatoes
5. Banana peppers
6. Olives
Chill for up to 1-2 hours. Before serving, toss the salad gently to combine the layers. Drizzle with the dressing (about 3-4 tbs.) and toss again to coat. Serve immediately.
Makes 6 large servings or 12 smaller servings. Great for potlucks, luncheons and parties!!!
