Thanks to this past week's Bountiful Basket, I was able to use beautiful veggies in these kabobs. To make the prep slightly less time consuming, I used bottled marinades. You can use your favorite flavors, but I used Garlic Expressions for the chicken and Stubbs Beef Marinade for the beef.
This is an excellent way to get in your veggies! We had 3 guy friends over for the party who never had this dish before and have not been big veggie fans. This recipe changed their minds! Great for kids too!
I roasted the spears in the oven this time, but you can make them on the grill as well. I will provide an addendum to this recipe once we try grilling them this spring.
Ingredients:
1.5 - 2 lbs. cubed beef
1.5 - 2 lbs. cubed chicken
1 cup garlic herb marinade for the chicken
1 cup steak marinade for the beef
2 medium sized zucchini, halved and thickly sliced
2 medium yellow squash, halved and thickly sliced
1 bottle pearl onions, drained
1 bag of fingerling potatoes (washed)
1 red bell pepper, sliced & chopped into medium sized pieces
1 orange bell pepper, sliced & chopped into medium sized pieces
1 package bamboo skewers
Place cubed chicken in a large mixing bowl, in the cubed beef in another. Pour in the marinades and wrap the bowls tightly with foil. Place in the refrigerator and let it marinate for at least 30 minutes.
Preheat the oven to 400 degrees. Spray 2 cookie sheets with non-stick cooking spray.
Fill a large pot with water and the fingerling potatoes. Heat on high until the water comes to a boil. Let it simmer 5-7 minutes. Drained the water and place the potatoes on a towel to cool. Doing this before roasting or grilling the spears will ensure that the potatoes are cooked perfectly.
Once the meat is done marinating, turn up the tunes and get to skewering. You can do any arrangement you like, but I tried to come up with a method so there was a balance between the chicken, beef and veggies. Plus, it looks pretty! ;-)
Place the meat and veggie spears on the cookie sheets. You should be able to fit 6-8 spears on a tray. Roast them for 20-25 minutes.
This will make an enormous amount of spears. Perfect for parties, wedding rehearsal dinners, and showers.
Yield: Makes 30- 40 spears
