8 c. water
2 2/1 tbs. chicken bouillon
1 lb. ground turkey
1 10 oz. can black beans, drained
1 10 oz. can Great Northern beans, drained
1 10 oz. can Pinto beans, drained
1 10 oz. can sweet corn, drained
1 tbs. cumin powder
1 tbs. chili powder
2-3 tsp. cayenne pepper
1 medium onion, chopped
1 tsp. minced garlic
salt & pepper to taste
Toppings:
sour cream
shredded cheese
sliced avocado
crumbled corn chips
In a large stew pot coated with non-stick spray, cook the ground turkey over medium heat until no longer pink, breaking up the meat with a spatula until it's finely crumbled. Add the chopped onions and stir. Add the garlic, stir to combine. Pour the 8 cups of water into the pot. Increase the stove top to high heat, bringing the contents of the stew pot to a boil. Add in the bouillon and stir well. Reduce the heat to medium.
Pour in the beans and corn and stir. Add in the seasonings and mix well. Cover and let the chili cook for about 15 minutes. Salt and pepper the chili to your taste.
A tasty Nebraska Red Beer pairs well with this! For all of you non-Cornhuskers-- that's a 1 can light beer to 1/4 cup tomato juice added. My husband prefers V8 to tomato juice. Very savory!
