This recipe came to me last night when dinner plans had fallen through and we're on the cusp on payday. I'm sure you all have experienced this before. But sometimes the lack of abundance leads to creativity.
Luckily I had a package of breakfast sausage, eggs, cheese, veggies, and a can of refrigerated pizza dough. Add in the pickled jalapenos and it's breakfast for dinner!

Ingredients:
1 refrigerated pizza dough
1 small onion, sliced thinly
1 cup chopped green bell pepper
1 medium tomato, diced
1 package of breakfast sausage
6 eggs
3 tbs. milk
butter
2 cups shredded cheese (I used a bag of different cheddars)
1/4 cup pickled jalapenos
salsa
1. Preheat your oven to 400F. Brown the sausage in a frying pan, and then drain. Set the sausage aside.
2. Pour the eggs and milk into a mixing bowl. Scramble well with a whisk.
3. Place your pan back on the heat and add 1 teaspoon of butter. Once the butter has melted, add the eggs and cook until set. The oven will finish the rest of the cooking!
4. Spray a 9x12x2 casserole dish with non-stick spray. Roll out the dough and push the dough so it covers the bottom of the dish.
5. Layer toppings in this order: sausage crumbles, scrambled eggs, veggies, and shredded cheese. Place the pickled jalapenos on top of the cheese.
6. Bake for 20 - 25 minutes. Let it cool for 5 minutes before cutting into it. Serve the slices topped with salsa.
Makes 4 - 6 servings. Makes great leftovers for breakfast!
